In the tourist areas around Hongya Cave and Jiefangbei, the upstairs places with river views cost noticeably more.
How to order
- Choose the broth first. Chongqing hotpot broth is made with beef tallow, so "mild" (微辣) is still spicy, just less than "medium". If you cannot take chilli, go straight to the split pot.
- Then the plates. Menus are mostly Chinese only; a phone camera translation is enough. Safe first-time picks: tripe (maodu), duck intestine, sliced beef, aorta (huanghou), lotus root, potato, tofu skin.
- Mix the dip. The dip is sesame oil with garlic. That is the one Chongqing people use. Its job is to cool the food and take the edge off the chilli, not to add heat. Afraid of the spice? Use more oil.
- Do not over-order. Add plates as you go.
If you cannot take chilli
- Order the split pot. The red side is still real Chongqing hotpot; you eat from the clear side.
- Some old-style places only do the red pot and have no split option. Ask at the door: "有没有鸳鸯锅" (do you have a split pot).

Eating alone
- Many places have small pots, one per person.
- Chuanchuan places are easier still: everything is on skewers, you pick them yourself and pay by the number of sticks, so nothing goes to waste.
The dinner queue
At the places locals like, 6:30 to 8 in the evening means a queue, and longer on public holidays. Two fixes: go at 5:30 or 6, or take a number, walk around the neighbourhood and come back when your turn is near.
